Marmelade cookies



Even when big and extravagant desserts are beautiful and amazing, sometimes I simply feel like stuffing some small, cute cookies into my mouth while drinking some tea, or another drink and reading a nice book, or scrolling through YouTube and other social networks.


So I decided to bake these sweet marmalade cookies. They are a perfect snack, or a cute gift idea flower shaped for spring, or star shaped for Christmas. Either way I love them because there are easy and fast to make, very yummy and totally classy and simple - you know, sometimes less is more.

I know that the video is in German. That is why I made this post, so you can still make these.
 


Ingredients for 30 cookies

350g / a little bit less than 3 cups all-purpose flour 
200g / 5/6  (a little bit more than 3/4) butter
150g / 3/4  sugar brown or white
1 egg
1 tablespoon vanilla sugar
grated lemon peel
marmalade (I used strawberry and plum flavoured marmalade)

baking plate, baking paper
baking temperature: 180°C / 356°F
baking time: 10 - 12 min
biscuit cutters in different sizes (and shapes if you like)

Combine the butter (please use room temperature butter), sugar (I actually used one third of the sugar and they still tasted great), vanilla sugar, lemon, egg and mix it up.
Then simply add the flour and mix it until lumps  -> 

                             
Knead the dough with your hands until it is one big dough that sticks together and form a circle
Next, flatten the dough a little bit, wrap it into cling film and put it into the fridge for at least one hour. (perfect time=one night)



After taking the dough out of the fridge and kneading it a little bit mottle the table and the rolling pin with flour so the dough doesn't stick the ground. Simply roll out the pastry then, try to make it evenly thick. 


Use cookie cutters to cut the design  you desire into the dough. BUT for one cookie you need to make two similar halves with the difference that one of them has a hole. This way we can stick the cookies together and fill in the holes with marmalade later on.                                                         For punching holes you can either way use a smaller cookie cutter or look for cookie cutters that are made to punch a hole (I bought this kind of cutters at TK maxx).
Place the cookies on a baking plate with a baking sheet.
                                                                                                                            Now bake the cookies in the oven for about 10 to 12 minutes.
The baking time also bepends on how thick the cookies are. I actually made the mistake to make the cookies differently thick. So at the end I had cookies with colours from light to dark brown. At least they weren't burnt and it kinda looked cool though! - always think positive, right?! 


After baking match the cookie pieces and apply marmalade on the bottom half of the cookie to make it sticky. To loosen the marmalade up you can stir it in an extra jar first. 
Finally, put the upper half on top of the bottom half and your cookie is nearly ready to be eaten. Just fill in the hole with marmalade. Congratulation! You've just succeeded making your very own marmalade Cookies. Enjoy them! ;) 

The YouTuber recommends to store the cookies in a can. He even says its yummier after a few days of storage. But I couldn´t try that because mine were eaten up after two days.
